As you know, Seth and I have moved into our new Seoul apartment and it is total fancy pants. It is city glamour ooh la la to the max. This is a three bedroom two bathroom high rise apartment… one the fourth floor. Ok we aren’t high in the clouds with the most amazing-est view but we do have a nice one. From our floor to ceiling windows in the living room, we have a view of Seoul tower. There are green trees to keep the sun a little filtered and when we want a full view of the city (or a sun tan) we head to the roof top. Seth and I have named this Le 37 after Le 188 in Hong Kong. Le 188 was a roof top restaurant in Hong Kong with a 188 degree view of the city and harbor. Le 37 is the 37th floor of our building which hosts a roof top park with tables and the most amazing view of Seoul and downtown.
After our sky-high visit, we headed back to our home for a most special dessert. Earlier we dined on sushi from the commissary and pork dumplings that we got from the frozen section. Very delicious! So since we ate all our dinner, we deserved dessert! A couple of weeks ago, I saw Cheesecake For Two on one of my favorite food blogs, The Novice Chef. She just revamped her blog too and it is worth checking out… after you are done here of course! Once I saw this dessert, I knew I HAD to try it. OMG it was amazing!
This dessert is super simple to make and will be a dinner date go-to from here on out. I want to have a dinner party just so I can make these for dessert and totally impress everyone! I liked the hint of vanilla that the flavored yogurt gave this dessert. If you want to tone down the sweetness, use plain yogurt. If you want to fancy it up, garnish with a lemon rind, drizzle of melted chocolate, or a sprig of fresh thyme or rosemary. Cheesecake For Two
You will need two martini glasses to serve your masterpieces in.
2 and 1/4 low fat honey graham crackers, crushed as fine as your strong hands can get them4 oz fat free cream cheese, room temperature2 oz vanilla Greek Yogurt1 tsp almond extract2 tbsp powdered sugar3 tbsp raspberry preserves1/2 cup fresh raspberries
1. Crush one graham cracker into each martini glass.2. Cream together cream cheese and Greek yogurt until well combined. Add in almond extract and powdered sugar and mix until creamy.3. Layer half of the cream filling over the graham crackers in each glass. Don’t worry if it doesn’t look perfect. The raspberries will take care of the mess.4. Scoop about 1 and a half tablespoons of raspberry preserves in each glass.5. Top with fresh berries.6. Crumble the last 1/4 of the graham crackers over the berries.7. Refrigerate for at least an hour, or up to 24 hours.8. Serve and become everybody’s new best friend!
