citrus and basil cupcakes

Last week I made the Lemon Lime Basil Cookies from Chasing Delicious. They were ridiculously yummy and so easy to make that I thought I had missed a step. Seriously, I went back and reread the directions twice! If you haven’t been to Chasing Delicious, you need to stop over and take a look. Russell isn’t chasing delicious anymore. He caught it and you can find it on his site.

After we demolished that batch of cookies I was hungry for more. But what I was really craving was a cupcake. This idea originated from the fact that I wanted to make a tasty treat for Seth to take to work and share with the Soldiers. It is my way of making people I have never met love me! Plus I knew that I would get a cupcake out of it.

However, I am lazy. So I cheated. I used a box of yellow cake mix to make these cupcakes. So sue me. They were super awesome and just as bright and summer-y as Russell’s cookies! They were like little fluffy cups of sunshine. And it took me no time at all!

 

Citrus and Basil Cupcakes

adapted from Chasing Delicious

makes 24 cupcakes

1 box yellow cake mix (and all the ingredients that the back of the box says you need)
1 teaspoon vanilla extract
zest from 2 lemons
zest from 1 lime
large handful of fresh basil, finely chopped
1/4 teaspoon sea salt

1. Preheat oven to 350 degrees. Prepare cupcake pans with liners.

2. Prepare the box cake mix as directed on the box. Add the rest of the ingredients and stir well to combine.

3. Fill each cupcake slot about 3/4 the way full. Bake for 21-23 minutes or until a toothpick comes out clean and the tops are slightly brown.
